Established in 2013, Four Pillars Gin is now, without a doubt, the top local gin in Australia, and probably the world’s most awarded gin distillery over the past two years. The Four Pillars Distillery, home of Four Pillars Gin, is located in Healesville, Yarra Valley, about an hour’s drive from Melbourne city centre. The finger limes highlight the Asian spices like coriander and star anise, complemented by the addition of fresh ginger. Turmeric adds an earthy quality, not unlike dill, and weight to the palate. The resulting gin is intense, but still very clean. But beware, at 58.8% alcohol by volume it packs a serious Navy-style punch.
